It’s Friday…finally! I don’t know what your week was like but mine felt like a long week for sure. It could be because I’ve been sick with a summer cold – like seriously I am a mommy and mommy’s don’t get sick days and I don’t have time for this. So I am welcoming this weekend and time to rest (well I actually have a busy weekend ahead of me but I’ll sneak in a nap I’m hoping) and spend time with family. Since it is Friday that means… Food Friday. I am excited to share with you this recipe. I made it last weekend at the cottage for my family and friends and it was a big hit. I had to make it again this week for my husband since he loves it, which means it must be really good because he isn’t a big fan of fruit. So if I have peaked your curiosity, the recipe I’m sharing with you today is called Glowing Strawberry-Mango Guacamole.
Ingredients you will need:
2 medium avocados, pitted and roughly chopped
1/2 cups finely chopped red onion
1 fresh mango, pitted, peeled, and finely chopped
1 1/2 cups finely chopped hulled strawberries
1/4 cup fresh cilantro leaves chopped roughly (this is optional but I used it for flavour)
1 to 2 tablespoons of fresh lime juice (for taste)
fine grain sea salt
nachos – for serving
Its a fairly simply thing to make and the more you do it the quicker you will get at making it. It really is 3 simple steps but it results in a delicious dish of mouth watering guacamole.
1. In a medium bowl, gently mash the avocado, leaving some chunks for texture.
2. Rinse and drain the chopped onion in the strainer to wash off the sulfurous compounds. This makes the taste of the raw onion more pleasant. Fold the mango, strawberries, onion and cilantro into the avocado, Season with the lime juice and salt to taste.
3. Serve immediately with your favourite corn chips. Since avocado tends to spoil quickly leftovers won’t keep for longer than 12 hours or so. One more reason to dig in.
So there you have it a simple yet delicious burst of different flavours in each mouthful. Hope you are have a great weekend and try this recipe and let me know what you think.
Sounds delicious! Thanks for the recipe. I will have to try this one.
